Braised Pork, Offal & Rice Sheets

Kelantan Kway Chap with braised pork and offal at Berseh Food Centre

Kelantan Kway Chap serves the familiar Teochew-style combination of broad rice sheets in broth with a separate plate of braised pork and offal.

The braised selection can include pork belly, intestines, pig skin and other cuts, cooked in a soy-based marinade with Chinese spices.

The rice sheets are served separately in a light savoury broth, allowing diners to alternate between the soft kway and the richer braised meats.

Current Recognition

Kelantan Kway Chap in the MICHELIN Guide

Kelantan Kway Chap · Pig Organ Soup entered the MICHELIN Guide Singapore Bib Gourmand selection in 2022.

Michelin specifically highlighted its pork cuts and offal — including belly, trotter, intestines and skin — cooked in a soy-based marinade with spices and served with kway chap rice noodles.

The stall continues to appear in the MICHELIN Guide Singapore 2026 Bib Gourmand selection.

What's on the Plate

The Kway Chap Components

Pork Belly

Braised until tender, with alternating layers of meat and fat.

Intestines

Cleaned and braised to absorb the soy-and-spice flavours.

Pig Skin

Soft and gelatinous, adding a different texture to the platter.

Kway

Broad rice sheets served in a light savoury broth.

Two Signature Directions

Kway Chap or Pig Organ Soup?

Kway Chap

Choose this for the classic pairing of rice sheets with a separate platter of braised pork, offal, skin and other items.

The braising style is generally lighter than some darker, sweeter versions of kway chap, while still carrying soy and Chinese-spice aromas.

Pig Organ Soup

The stall's other signature is a peppery pig organ soup, typically containing ingredients such as liver, stomach, meatballs and preserved vegetables.

Compared with the braised kway chap set, the soup gives a cleaner, more pepper-forward experience.

Flavour & Texture

What to Expect

Light Herbal Braise

The braising sauce leans savoury and aromatic rather than especially thick or sugary.

Cleaned Offal

Much of the appeal comes from well-prepared intestines, skin and other cuts with distinct textures.

Peppery Soup

Pig organ soup offers a hotter, pepper-driven contrast to the soy-braised kway chap.

Berseh Food Identity

Why Kelantan Kway Chap Matters

Kelantan Kway Chap combines two things that make Berseh distinctive: an old-school offal-based hawker dish and current external recognition.

Its Bib Gourmand status gives the stall wider visibility, but the food itself remains rooted in a very traditional hawker format — broad rice sheets, braised pork cuts, intestines, skin and a separate pig organ soup.

Together with nearby stalls such as Lao Liang and Fu He, it helps make Berseh one of the more unusual places in Singapore for traditional pork, offal and herbal-soup dishes.
