Fu He Turtle Soup
Fu He Turtle Soup
A long-running Berseh Food Centre stall known for herbal soft-shelled turtle soup, lamb soup and old-school Cantonese-style dishes — and currently listed in the MICHELIN Guide Singapore.
What Fu He Is Known For
Fu He specialises in soft-shelled turtle soup served in a deeply savoury herbal broth.
The dish combines tender turtle meat with gelatinous pieces of skin and connective tissue, giving the soup a texture quite different from more familiar chicken or pork-based herbal soups.
The broth is the defining feature: rich, herbal and slightly sweet, with the kind of layered aroma associated with traditional Chinese tonic-style soups.
Fu He in the MICHELIN Guide
Fu He Turtle Soup is currently listed in the MICHELIN Guide Singapore 2026 as a Street Food establishment at Berseh Food Centre.
Michelin highlights the stall's soft-shelled turtle and lamb soups, describing the broth as layered with umami, sweetness and complex herbal aromas.
The Guide also recommends Fu He's slow-cooked lamb ribs.
More Than Three Decades at Berseh
Fu He has been part of Berseh Food Centre for decades.
A Housing & Development Board feature published in 2021 described Fu He Turtle Soup & Delights as having operated for more than 30 years and as one of the centre's oldest tenants.
Earlier food coverage also documented Fu He as one of the remaining turtle-soup stalls in an area that was once more closely associated with this traditional dish.
Other Dishes at Fu He
Although turtle soup is the best-known dish, Fu He serves a broader range of Cantonese-style herbal soups and cooked dishes.
Herbal mutton and lamb soups are another major part of the menu.
Slow-cooked lamb ribs are specifically highlighted by Michelin.
Fu He has also been associated with claypot dishes, braised items and other traditional Chinese soup dishes.
The Fu He Soup Style
The broth carries a distinctly Chinese-herbal aroma rather than tasting like a plain meat stock.
Michelin notes a combination of umami and sweetness in the broth.
Turtle skin and connective tissue add a soft, gelatinous texture that is central to the experience of the dish.

Fu He represents a different side of Berseh's heritage-food identity. While stalls such as Fu Zhou Poh Hwa preserve a Fuzhou fried snack tradition and Lao Liang keeps a rare Teochew cold dish alive, Fu He represents the old-school Chinese herbal soup tradition.
Its longevity at Berseh, current Michelin recognition and unusual menu give the stall a stronger historical and cultural role than a typical individual food listing.
