Lao Liang Pig Trotter Jelly Closes After 45 Years at Berseh Food Centre

Lao Liang Pig Trotter Jelly & Shark Meat 老两 Stall

Lao Liang Pig Trotter Jelly & Shark Meat, one of Berseh Food Centre’s long-running Teochew hawker stalls, closed permanently on 31 October 2026 after the elderly couple behind the business decided to retire.

The stall, formerly located at #02-37, was known for traditional pig trotter jelly, shark meat, kway chap and braised dishes.

Its closure marks the end of about 45 years of operation under husband-and-wife hawkers Yu Zhongrong and Lin Cailuan, both reported to be 75 at the time of retirement.

Lao Liang Closed on 31 October 2026

News of the Lao Liang closure drew a strong response from regular customers and long-time followers of the stall.

In the days leading up to its final service, customers reportedly began arriving several hours before opening.

Although the stall usually opened at around 10am, queues were said to form from as early as 7am or 8am.

At busy periods, the line stretched towards the entrance of Berseh Food Centre, and the owners sometimes had to inform customers waiting further back that the food was likely to sell out.

Why Did Lao Liang Close?

The decision to close was mainly linked to the physical demands of running the stall.

The couple reportedly began work at around 3am to prepare ingredients before service.

Their preparation included processing meat, simmering soup stock, preparing sauces and making the stall’s signature pork trotter jelly and shark jelly.

The full preparation process could take around 10 hours.

After decades of this routine, the couple said continuing had become too exhausting.

The closure was therefore a retirement rather than a result of a lack of customers.

A Three-Generation Family Business

Lao Liang was part of a family hawker business passed down through three generations.

Yu began helping his father and grandfather when he was young before eventually taking over the business.

The stall’s history stretched across several locations before Berseh Food Centre.

Published accounts trace the family business from the area near the former Singapore Thong Chai Medical Institution, later to Hill Street Food Centre, and eventually to Berseh Food Centre.

Lao Liang moved to Berseh Food Centre in 1998 and operated from #02-37 until its closure in 2026.

What Was Lao Liang Known For?

The stall was especially associated with traditional Teochew pig trotter jelly.

Pig trotter jelly is a chilled dish made by slowly cooking pork trotters until collagen from the skin and connective tissue is released into the broth.

The meat and concentrated broth are then chilled until the liquid naturally sets into a savoury jelly.

The process requires long cooking and chilling times, which is one reason the dish has become increasingly difficult to find.

Lao Liang was also known for shark meat, kway chap and other Teochew-style braised dishes.

Customers Returned for the Final Days

The closure announcement brought back many regulars, including customers who had followed the business from its earlier locations.

One elderly customer reportedly travelled from Choa Chu Kang specifically to eat at Lao Liang again after hearing about the closure.

She had known the business since its earlier days near the former Thong Chai Medical Institution.

The final queues reflected the strong connection between the stall and customers who had eaten its food over many years.

Could Lao Liang Continue Under a New Owner?

The original Lao Liang stall at Berseh Food Centre closed on 31 October 2026, and any future continuation should be treated separately unless a successor is officially confirmed.
